Our first Spiced Rhum. The spices combine with interesting grassy earthy notes of young Agricole Rhum. Rhum is made with sugar cane juice, not syrups or molasses - which gives a fresher drink, perfect for our tropical climate.
Cast your imagination back to 1826. The Moreton Bay settlement, overseen by Captain Logan, was flourishing despite the challenging conditions. Under the Captain's command eighty five acres had been cleared and sugar cane was growing. Captain Logan embarked on an extensive program of building; the hospital, surgeon's quarters, gaol, barracks for convicts and soldiers, Commissariat Stores and the Old Windmill on Wickham Terrace were all commenced. The Old Windmill is found on our main label. Brisbane owes a lot to the foundations laid by the Captain of Moreton Bay.

Beginning with vegative cane notes and a subtlety imbued by Orris root and Orange, the palate is then assaulted with nuanced baking spices, beginning with pimento, then into more delicate hints of cinnamon and nutmeg. Vanilla lengthens the back palate, drawing the oak characteristics forward, to conclude on an assertive note of black pepper.
Supremely tasty with a highly spiced ginger beer, or alternatively freshly pressed apple juice, the spirit also possesses the complexity to work in an old fashioned, or other tropical cocktails.
First we ferment sugar cane juice following the French Caribbean AOC rules of Martinique. We begin our fermentation of the virgin sugar cane juice within a few hours of harvest. After about 48 hours the fermentation is complete and we distill the result. We distil a second time with a special blend of tropical spices.
Captain Moreton Rhum is then finished in a 200L Topaque Barrique from our friends at dutschkewines.com , it is quite simply amazing, if you like spiced rum, this is one that you should not miss.
(Most of our annual Rhum production is being aged in various old barrels and will be sold in due course as Brown Snake Rhum - named after the Brisbane River.)
