First we ferment sugar cane juice following the French Caribbean AOC rules of Martinique. We begin our fermentation of the virgin sugar cane juice within a few hours of harvest. After about 48 hours fermentation we distill the result. We rest the 73% ABV spirit for a month in stainless steel drums before finishing in specially selected oak barrels.
